I had an early breakfast meeting at my home recently.
If you are like me, there is no planning for a breakfast meeting; it’s a good day if I can make it to an 8:00am meeting looking professional and speaking English.
Mornings are such a rush. I am not a morning person.
In an attempt to appease everyone, and soothe my incredibly hungry stomach, I served my Cheesy Oatmeal to everyone. To my complete surprise, I was not the only one who got hooked on it, and everyone who attended has asked for the recipe.
So here it is:
1 cup of cashew, almond or rice milk
½ cup of water
1 soup bouillon cube
1 teaspoon of turmeric
½ cup gluten free rolled oats
3 Tablespoons nutritional yeast
Mix it all together in a pot, and cook until the oatmeal is done.
Serve with half an avocado and some salsa.
It’s so comforting, warming, and savory and the best part? It fills you up until about 2:00pm, which is just about the time I can stuff something else in before my evening appointments.
As my Dad would say it sticks to your ribs and puts hair on your chest.
